Look Who Is FIVE Months Old Today!

Brody (aka Brody-cakes, Moose, Moosey, The Chunk) is five months old today. He celebrated by eating his weight in jars of baby food. (Not really, but almost-the boy can eat!)

Taco Soup Recipe and Ten on Tuesday

Before I get to ten on Tuesday, I had a few people on Facebook ask for my taco soup recipe. So here it is. It's super easy to make and I usually have all of the ingredients on hand-so no need to remember anything special at the grocery. A couple of things to note-most taco soup recipes call for some kind of bean (black, pinto, you get the idea) and a packet of dry ranch dressing mix.
This one has neither.
Because:
a-At least two of the boys and I detest beans-so it's easier to omit them than eat around them-and majority rules at our house.
b-I don't normally use ranch dressing mix-so I'd have to remember to buy it specifically for this dish and let's be honest-I won't remember.

Okay now that we've cleared that up, here's the recipe:


Christina's Taco Soup

1 lb ground beef (or turkey)
1/2 white onion diced
2 cans of diced tomatoes (Mexican style-if you have it-regular works too!)
1 pound of frozen corn (or 2 cans of corn)
1 package of taco seasoning (we use Ortega)
1 1/4 cups of water (use your judgment here-I sort of add water until it is the consistency we'll eat)

Brown the ground beef and onions. Drain them well. Add the ground beef mixture and all the other ingredients to a large saucepan or Dutch Oven. Simmer for 45 minutes. (You could also cook this in a slow cooker-just set it on low and let it cook for 6 hours.)
Serve with grated cheese, tortilla ships, sour cream and guacamole. (I can't even look at sour cream-so we just use grated cheese.) It makes a ton-so you will have plenty of leftovers!

Onto Ten on Tuesday...
1-Jackson loves playing Brody and having his picture taken. Well...he does until Brody spits up and then we hear: "EWWWW...Brody puked on me, I have to go change clothes!" Even though the spit-up was barely the size of a dime. The kid is such a clean freak.

2-Bryce put on quite the display at the b-ball game Saturday. During the team introductions, he came out backwards through the cheerleader's tunnel, did some kind of a spin into a half split and did the "call me" sign (fingers to ear and mouth) at the crowd. Later on he tried to get the crowd to cheer by raising his hands as he ran down the court. He is awesome!

3-While Bryce was being the Chad Johnson of Upward basketball, Jarron was quietly owning the court. Making shots and free throws and just really playing good. So proud!

4-The boys got some kind of disguise glasses (fake nose, eyebrows and frames)-and being the way they are, they dismantled them until all that was left were the frames. Which Chuck decided would look good on Brody. Poor kid.



5-Why are there no pictures of the twins in this post? Because they at an age where they actively avoid the camera-or do crazy things and faces that make the pictures unusable. It's awesome.



6-My hair saga continues-I got red highlights and newly added bangs last week. I like the red, not sure about the bangs. Kelly (my stylist) did a great job as usual, I'm just having a case of buyer's remorse. You can't really go back once you've cut your bangs, you just have to wait for them to grow out. Which I am doing.

7-Jarron broke out in hives Friday morning-we still aren't sure what triggered it. I freaked out because I've never had that happen to me. But it apparently happens to people with allergies a lot. Who knew? Anyway, he didn't really complain but he did look pretty miserable for a few days.

8-I'm signing the boys up for Spring soccer this week. So instead of crazy basketball stories, soon you'll be reading crazy soccer stories. Aren't you lucky!


9-Brody loves his feet. A lot. The moment they are visible, he immediately attacks them. He thinks they are wonderful.


10-This was probably my longest post ever! As London Tipton would say "Yay me!"

Five on Friday & Birthday Wishes

1. I know, I know, there was no ten on tuesday this week. I've had a very crazy week, which involved 6 hours in the car (a visit to Chuck's family in KY), a trip to Urgent Care (for me-laryngitis), 9 hours in the back room of a focus group facility (again me-for work), losing power at our church and kids screaming (ours and all of my Puggle kids), a trip to the doctor (Chuck-same thing I have), a trip to the hair salon (me-color and cut), and finally, breaking out in hives (Jarron-still not sure why). So instead you get five on Friday.

2. Today is Chuck's birthday! He's 34 today, so if you see him be sure to wish him a Happy Birthday. I know he reads this sometimes, so I hope he knows how much the boys and I love and appreciate him. We are so, so lucky to have him in our lives.

3. The boys had a great weekend filled with horseback riding, 4-wheelers (going extremely slow), swimming pools, and fun with the Kentucky cousins. They only get to see Logan and Tate a couple of times a year, but they have so much fun together-you'd think they hang out all the time. Brody even got in on the action-taking his first dip in the hotel swimming pool. For the record-the pool was not heated-so he literally got dipped in for the pictures and came right back out into his warm, comfy robe.

4. Moosey had to go to the doctor last week during the crazy freak snowstorm (we got another 6 inches of snow -that had NOT been predicted, it took Chuck 3 HOURS to get home that night-not fun!). He weighed 16 pounds 2 ounces! Yes, you read that right. SIXTEEN pounds! He gained nearly a whole pound in a week and a half. The kid loves those jars of baby food. A lot!

5. Some fun facts for you:
Number of pictures taken in February-177-I kid you not. And we are not even half way through the month.
Number of times I have been in a doctor's office of some sort in the last 3 weeks: 3
Number of inches of snow we had on the ground at one time: about 14 (and an inch of ice)
Number of jars of baby food Moosey eats in a day: 4-5
Number of times Jackson has been on punishment from video games this week: 2 (sigh)
Number of valentines I bought this week: 72 (fortunately I only had to address 24 of them)
Number of hours I have spent trying to figure out how to do 2nd grade math: 3 (at least-and I still don't get it)

Ten on Tuesday

1. Hi, my name is Christina, and I am addicted to taking photos. Seriously. The first weekend of every month, I organize my photos from the previous month (burn them to CD, copy to external hard drive, download to Kodak Gallery). When I did that this Saturday I realized I took 293 photos in January. That seems like a lot.

2. We got some snow here last week-by some, I mean 8 inches and another inch or so of solid ice. The boys were off school for FOUR straight days. Do you have any idea how bored 2 seven year olds, a four year old, and a four month old get after being stuck inside for 4 days? Let me tell you, it wasn't pretty!

3. It is supposed to snow again today. I did not know that when I left this morning. Wearing 2 inch spike heels. Sigh.

4. Brody has moved on from rice cereal and is enjoying all kinds of fruits and veggies. He's such a champion eater-they only thing he has turned his nose up at is pears-he even loved peas! None of the other boys liked anything green.

5. Jackson has been putting together some crazy pajama ensembles. Lots of patterns (that usually clash) and at least 2 shirts. As long as he isn't wearing them in public I guess I am okay with it.

7. My nephew, Keats, turned two a couple of weeks ago. We got him the Yo Gabba Gabba Magic Dance hat. I think it suits him.

8. We are going to Kentucky this weekend and staying in a hotel with a pool. Which means I need a swimsuit. Sigh. I hate swimsuit shopping.

9. I did some scrapbooking last week-I am completely caught up in Brody's album and did a bunch of stuff in our 2008 album. Woo. Hoo.

10. I got a new app for my iPod called Lose It. Basically it gives you a calorie budget for each day based on how much weight you want to lose, you enter everything you eat each day and it tells you how you did. I swear the thing enjoys telling me how far I went over each day. I am not a fan of the bright red "!" alert when I go over. I am beginning to resent this app.
